Ingredients:
- 2 bags Wild HarvestⓇ Frozen Mango, thawed
- ¼ cup sugar
- ⅔ cup sweetened condensed milk
- ½ cup half-and-half
- Zest of 2 limes
- ⅓ cup fresh lime juice
- 8oz white chocolate, finely chopped
- 1 tablespoon coconut oil
- ½ cup graham cracker crumbs
Directions:
- In a blender combine mango and sugar and puree until very smooth.
- Divide mango mixture among popsicle molds, filling them halfway. Place top on mold and insert popsicle sticks. Freeze solid, about 4 hours.
- In a medium bowl whisk together condensed milk, half-and-half, and lime zest and juice.
- When mango mixture is frozen, pour lime juice mixture into popsicle molds, filling them to the top. Freeze again until solid, at least 6 hours or overnight.
- In a double boiler or a heatproof bowl set over a saucepan of steaming (not boiling or simmering) water, melt chocolate and coconut oil, stirring constantly. Take bowl off pan of water.
- To remove pops from mold, dip each one in cool water up to the very top of mold until pop slides out. Place pops on a parchment-lined sheet pan and freeze for 10 minutes.
- Dip each pop partially in white chocolate and place back on sheet pan. Sprinkle with graham cracker crumbs and freeze again for 10 minutes before serving.
